S3EP17: Chef ºFarenheight presents...Thai Green Curry Chicken


Sa wad de ka friends! That's hello in Thai!

I hope you're in good spirits! Its November and the holiday season is here! We are so excited, especially for one of our favorite holidays, Thanksgiving or what we like to call "our annual feast day" (giving respect to all of the sacrifices our Native Americans have gone through for this country).

Last month, our host Farah Jeune had the blessing to visit Thailand for her 29th birthday and she had the best adventure ever! From visiting a 3D art gallery, to seeing beautiful temples, to spending a day with rescued elephants, Farah's trip to Thailand was perfect! She is beyond grateful to the the universe for making her see and experience the love and culture of Thailand and she wanted to share some of those stories with you!

One of her favorite things to do while in Thailand was eat! Thai cuisine is known for its incredible spices and delicious unique flavors. Our host took a cooking class at the Siamese Cookery House in Bangkok, Thailand where she learned more about food & culture and how to cook some classic Thai dishes. Today she's sharing how to make Thai Green Curry Chicken.

Thai Green Curry Chicken is a Southern Thailand curry which is milder, with some Indian and Malay influence. This Thai green curry recipe is prepared by using Thai Green Chili Peppers, which has a different flavor from the mature Thai Red Chili Peppers. Our host couldn't find Thai Green Chili Peppers here in Boston but she was able to find the pre-made Green Curry Paste so the recipe will still be delicious!

Here are the recipe steps below. This recipe comes from the Siamese Cookery House.

Cook Time: 22 mins

Other Tools Used: Stove, Cooking Pot, Stirring Spoon, Ninja Blender, Knife, Cutting Board

*This dish can be served with Jasmine Rice or Fresh Noodles.*

Step 1: Start cutting up your vegetables.

Note: Thai Green Curry Chicken normally uses Thai Eggplants but you can add other veggies you love to this dish. I added Red Bell Pepper, Onions and Red Chili Peppers to mine.

Step 2: Place your wok (cooking pot) on stove and turn the heat on low. Add 1 tablespoon of Canola Oil

Step 3: Add 1 tablespoon of Coconut Cream, 1 tablespoon of Green Curry Paste and 2 cups of Chicken to pot.

Note: You can add any protein you like to theThai Green Curry recipe (chicken, tofu, etc.) or use no meat at all.

Step 4: Allow chicken to cook until its tender (not overcooked).

Step 5: Blend 1/4 cup of Basil and 1/4 cup of Coconut Milk. Blend well.This will allow the dish to look more green and add more flavor.

Step 6: Add your Basil & Coconut Blend into your pot. Stir it up. Put heat on Medium/High.

Step 7: Add your chopped veggies and seasonings to pot. Do not add Basil just yet.

Step 8: Add 1 cup of Coconut Milk to pot.

(OPTIONAL): Add Red Chili Peppers to pot.

Step 8: Add Basil to pot. Allow mix to boil, put fire on low heat.

Step 9: Serve :) Pour Thai Chicken Curry on to either Jasmine Rice or Fresh Noodles.

Step 10: ENJOY!
